Ingredients
2 cups pineapple juice (preferably unsweetened)1 cup vegetable broth
3-5 tablespoons cornstarch (depending on desired thickness - needs to match water)
3-5 tablespoons water (depending on desired thickness - needs to match corn starch)
1 tablespoon butter
1/4 cup crushed pineapple (or 1/2 cup for a chunkier gravy)
Salt and pepper to taste
Optional: 1 tablespoon brown sugar for extra sweetness
Instructions
In a small bowl, create a cornstarch slurry by mixing equal parts cornstarch and water. Stir until smooth.In a saucepan over medium heat, combine the pineapple juice and broth. Bring the mixture to a gentle simmer.
Gradually whisk in the cornstarch slurry to the simmering liquid. Keep whisking to prevent lumps from forming.
Continue to simmer the mixture, stirring frequently, until it thickens to your desired consistency, which usually takes about 5-7 minutes.
Add the butter and crushed pineapple, and stir until it melts and integrates into the gravy. If desired, add brown sugar for extra sweetness. Season with salt and pepper to taste.
Serve the gravy warm in a gravy boat or small bowl.
