Oat Beverage (aka Oat Milk) Recipe

Our oat beverage (aka oat milk) offers a delightful blend of creamy texture and a subtly sweet, earthy flavor that closely mimics the richness of milk, without any dairy. Made from rolled oats, this drink is not only smooth and lush but also boasts a light beige hue that makes it visually appealing. Its natural thickness, achieved with a hint of guar gum, ensures that every sip is satisfyingly velvety. Perfect for pairing with your morning cereal, coffee, or enjoyed on its own as a refreshing beverage. Ideal for individuals who are lactose-intolerant or those who exclusively adhere to a plant-based diet.

Important Note: Do not use instant oats. Instant oats are more processed, leading to a beverage that can become slimy or overly thick due to the quick release of starches. Rolled oats offer a creamier texture without becoming too slimy, making them the best choice for oat beverage.

Ingredients

1 cup rolled oats or 3/4 cup oat flour
4 cups water (or 3 cups for a creamier texture)
2 tablespoons neutral oil
1/8 teaspoon guar gum
1/4 teaspoon calcium carbonate
1/4 teaspoon sunflower lecithin
A pinch of salt
Optional: 1-2 tablespoons maple syrup or sugar
Optional: 1/2 teaspoon vanilla extract

Instructions

If using rolled oats, rinse the rolled oats under cold water to remove any excess starch, which helps in reducing sliminess.

If using rolled oats, combine the rinsed oats and water in a blender. Blend on high for about 30 seconds to 1 minute until the mixture looks well combined.

If using oat flour, combine the oat flour and water and mix thoroughly.

Use a nut milk bag or a fine mesh strainer to strain the oat mixture into a bowl or pitcher, pressing to extract as much liquid as possible. Discard or repurpose the oat pulp.

Return the strained liquid to the blender. Add the oil, guar gum, calcium carbonate, sunflower lecithin, salt, and any optional ingredients. Blend until well combined.

If the beverage isn't as thick as you'd like, blend in a tiny bit more thickener (guar gum). Be cautious to avoid making it too thick.

Transfer the oat beverage to a bottle or jar and chill in the refrigerator. Shake well before each use as separation is natural.

Keep refrigerated. Will keep 3-5 days.
