1 cup sliced cucumber
1 cup diced peach
1/2 cup pitted whole black olives
1/4 cup thinly sliced red onion
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
Chia seeds (garnish)
Sesame seeds (garnish)
Fresh ground black pepper (garnish)

Dressing

3 tablespoons lemon juice
2 tablespoons balsamic vinegar
1 tablespoon maple syrup
1 teaspoon dijon mustard
Salt and pepper to taste

Instructions

In a large salad bowl, mix together the halved cherry tomatoes, sliced cucumber, diced peach, whole black olives, and thinly sliced red onion.

In a small bowl, whisk together lemon juice, balsamic vinegar, maple syrup, dijon mustard, and a pinch of salt and pepper until well combined and emulsified.

Drizzle the dressing over the salad ingredients. Add the chopped parsley and cilantro, then gently toss to ensure everything is evenly coated.

For the flavors to meld together nicely, let the salad sit for about 15-30 minutes in the refrigerator before serving.

Give the salad a gentle toss once more before serving. Sprinkle chia seeds, sesame seeds and fresh ground black pepper over the top upon serving.

This dish is best enjoyed chilled, allowing the flavors to come together harmoniously.
