2 slices of whole grain bread1 cup cooked garbanzo beans (chickpeas), slightly mashed
2 lettuce leaves
1 medium tomato, sliced
¼ cup cucumber, thinly sliced
2 tablespoons vegan mayonnaise
1 tablespoon mustard
Salt and pepper, to taste
1 teaspoon lemon juice
1 teaspoon olive oil
1 teaspoon granulated garlic
½ teaspoon smoked paprika
½ teaspoon cumin
Sweet Potato Fries
2 large sweet potatoes, peeled and cut into fries1 tablespoon olive oil
1 teaspoon paprika
Salt and pepper, to taste
Instructions

In a small bowl, mix the mashed garbanzo beans with lemon juice, olive oil, garlic, smoked paprika, cumin, salt, and pepper.Toast the bread slices to your liking.
Spread vegan mayonnaise and mustard on one side of each bread slice.
On one slice, layer lettuce, tomato slices, cucumber, and the seasoned garbanzo beans.
Top with the second slice of bread.
Sweet Potato Fries
Preheat your oven to 400°F (200°C).Toss the sweet potato fries with olive oil, paprika, salt, and pepper.
Spread the fries on a baking sheet in a single layer.
Bake for 25-30 minutes or until crispy, turning halfway through.
Serve the garbanzo bean sandwich with a side of crispy sweet potato fries.
