Ingredients

1 cup textured soy protein
1/2 cup vital wheat gluten
1/4 cup all-purpose flour
1/4 cup canola oil
1/2 cup water
1 tsp yeast extract
1 tsp granulated onion
1 tsp granulated garlic
1/2 tsp salt
1/2 tsp sugar
1/4 tsp crushed red pepper
1/4 tsp fennel seeds, crushed
1 tsp mixed Italian herbs (italian seasoning)
2 tbsp methylcellulose
1 tsp barley malt extract

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, combine textured soy protein, vital wheat gluten, and enriched all-purpose flour.

Stir in yeast extract, onion powder, garlic powder, salt, sugar, crushed red pepper, fennel seeds, Italian herbs, and barley malt extract.

Gradually add water and canola oil to the dry ingredients, mixing until a firm dough forms. If the mixture is too dry, add a little more water. Incorporate the methylcellulose to help bind the mixture.

Shape the mixture into small balls, about the size of a tablespoon each.

Place the meatballs on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and firm to the touch.
