2 medium yellow squash2 medium zucchini
2 tablespoons olive oil
1 teaspoon granulated garlic
1 teaspoon dried thyme
Salt and pepper to taste
¼ cup grated plant-based Parmesan cheese
Fresh herbs (like parsley or basil) for garnish
Instructions
Preheat your oven to 375°F (190°C).Wash the yellow squash and zucchini, and cut them into 1/4-inch thick slices.
In a large bowl, toss the squash and zucchini slices with olive oil, garlic powder, thyme, salt, and pepper until evenly coated.
Arrange the squash and zucchini slices in a baking dish in an overlapping pattern. Alternate between a slice of yellow squash and a slice of zucchini for a colorful presentation.
Sprinkle the grated Parmesan cheese evenly over the top of the squash.
Bake in the preheated oven for 25-30 minutes, or until the squash is tender and the top is starting to turn golden brown.
Garnish with fresh herbs and serve warm as a delicious side dish.
