1/4 cup plant-based butter or olive oil (we strongly recommend the plant-based butter due to taste)1/4 cup all-purpose flour
2 cups unsweetened almond milk (or any plant-based milk)
2 teaspoons soy sauce or tamari (for a gluten-free option)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
1/4 teaspoon dried thyme

Use original, no additional added herbs or spices.In a medium saucepan, heat the plant-based butter or olive oil over medium heat. Add the flour and whisk continuously for about 2 minutes, until the mixture becomes golden brown. This part is called the roux.
Gradually whisk in the almond milk, ensuring there are no lumps. Keep whisking until the mixture is smooth.
Add soy sauce, garlic powder, onion powder, black pepper, and thyme. Stir well to combine.
Reduce heat to low and let the gravy simmer for 5-7 minutes until it reaches your desired consistency. Remember, it will thicken slightly as it cools. If the gravy is too thick, you can thin it with a bit more almond milk.
Taste and adjust the seasoning with salt and more pepper if needed. Recommended for serving warm over slices of seitan turkey. This gravy also pairs beautifully with a variety of plant-based holiday dishes, such as mashed potatoes, roasted vegetables, and vegan stuffing.
Store any leftover gravy in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a little plant-based milk if it's too thick.
