Ingredients

2 cups homemade unsweetened cashew yogurt (from our website recipe)
1 medium cucumber, finely grated
2 cloves garlic, minced
2 tablespoons fresh dill, finely chopped
2 tablespoons lemon juice
Salt and pepper, to taste
Olive oil (for drizzling)

Instructions

Squeeze the grated cucumber to remove excess moisture. Cucumbers contain a high water content, and if this water isn't removed, it can dilute the tzatziki, resulting in a watery, less flavorful sauce.

In a bowl, combine the homemade cashew yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice.

Add salt and pepper to taste. Mix well.

Refrigerate for at least 1 hour to allow flavors to meld.
